Nothing hits the spot for me any better than a warm bowl of soup on a brisk winter day, and one of my personal all time faves is Tomato Soup. So last week I determined that I would make it from scratch and the end result was wonderful!
I had watched a video a week or so before of what sounded like a wonderful recipe, but for love nor money I could not find it again when I was ready to make the soup. So I took what few ingredients I could remember and added my own and made the recipe below.
CREAMED TOMATO SOUP
Ingredients:
- 2 cans of diced garlic, oregano and basil tomatoes
- 1 *10.5 ounce can of cream of chicken soup
- 2 *cans of milk
- 1 Tablespoon Parsley
- 1/4 Teaspoon Thyme
- 1/4 Teaspoon Paprika
- Pinch of Cayenne
- 1/8 cup sugar
Puree diced tomatoes, chicken soup and milk together with a blender (I used my hand blender right in the pot!). Add the seasonings and sugar and cook on medium heat as not to scorch the milk. Heat until boiling and then cook on low for another 20 minutes.
Serve with a grilled cheese sandwich or your favorite crackers. For me it was a taste of childhood in a bowl.
